As you will soon discover, Cairo is not the most straight forward place, exemplified by the guys on this board who tend to make it even that much more obscure, given their obtuse ways of communicating, or not.

The easiest options for a foreigner with little time and no Arabic language skills is to connect with one of the many African girls who operate out of various bars and cafes. The ones I am most familiar with are Henry's and the open café at the Marriott in Zamalek and Korena bar in Maadi (I can't remember the address off the top of my head, but it should be in one of the earlier posts). There are a few clubs in Haram as well on the Giza side of the city, but I always found those more hit and miss and best to go with a few friends.

As for the girls at the Korena, many of them will not go back to your hotel with you but rather take you to their apartment, often shared with others, if not their families, mothers included. It is an odd experience, but my experiences have always been quite stellar. They are some amazing lovers.

Anyone posting online as an escort in Egypt is a complete and total scam or rip-off.

As for Egyptian girls, much more difficult if you don't know Arabic. But with google translator on your phone it can happen. I've found the Arabian Nights shisha café in the Marriott to be the best next to some of the shisha cafes in Mohandiseen.
