Regarding the color of the brazilian women. As mentioned Brazil is extremely mixed. Native indians, immigrants from Europe, Asia and the Middle-East. A mixture of all these and that's Brazil.
If you want to meet really dark girls, Bahia is the place to go to. The biggest chance of meeting real blond girls with blue eyes is in the south. Indian girls you'll find a lot in Amazonas, Acre, Rondonia, Roraima and Pará. If you want to find chubby girls, without necks and large squared heads you should go to Ceará. Each region, or state, have their typical population. I've travelled in all the brazilian states and can often guess right where the girls from.
I have no special colour of the girls that's my favourite. It depends of my mood what I want to f*ck, but propably the majority are morenas. Since I went to Brazil the first time in 1991 I've been keeping a f*ck-book where I note name, contact information, details about tit-size, ass-size, performance details about BJ, CIM, anal and a lot of other details. This little book have been very useful when I return to a city and want to refresh the memory about a girl before I decide if she's worth meeting again. The statistics say that about 47% of the brazilians are white. Of course a large part of these whites are a mixture of white and coloured people. Are there a lot of white girls in Brazil? Yes, there are. Are there a lot of white girls in Brazil that looks like German or Scandinavian girls? Not many, mainly in the south. What about the North-East, are there no whites? Of course there are plenty of them, white girls with nordestino features.
I've never met anybody who wanted to go to Brazil to specifically f*ck white girls. You go there to f*ck brazilian girls. They might have black, brown och white skin.

In Thailand I hit it off with a former UFC competitor at one of the local academies. We hung out a few times and practiced on the matt together. Unfortunately he's a 280 lb + guy and not a sub 120 lb girl. My friend did get a little crush on a cute petite BJJ competitor but nothing ever came of it. So yes maybe we will get luckier this trip. There is plenty to do in Rio for a month. It's a party and beach city, with adequate mongering and arts facilities, and lots of tourist attractions. You will want to stay anywhere in the southern half of the city. Ipanema and Leblon are upmarket but a longer distance from other districts. Copacabana is a bit crazier and closer to downtown. Botafogo is one stop further to downtown and a cultured choice (good arts, cuisine) and a short metro or bus ride to the Copacabana or Leme beaches. Avoid outlying Barra de Tijuca as it's too far away and there's been additional problems with transport there recently.
Sao Paulo has no beach but well-structured, good value mongering and also some of the best cuisine in the world. It is more business-orientated and 'westernised' than Rio, large infrastructure, biggest city in the southern hemisphere. Travelling distances within the city can be considerable. People are very polite. It is not tourist-orientated and not so easy to navigate at first so many mongers take advantage of ABG's guide service (for which I understand he charges a small fee, though I've never met him). The 'Times Square' area of SP is Avenida Paulista and a good place to stay with access to everything. The downtown area, as with Rio, is a bit scruffier. There are several attractive areas within reach of Paulista, such as trendier upmarket nightlife and Bohemian, sophisticated dining and art places such as Vila Madalena. A map of the sort of places you want to go (eg mongering) may help you pick a place to stay. Bear in mind the area near Paulista is hilly in many places so when staying there it's best to be within a block of the main strip.
I use both AirBnB and hotels in both cities. Hotels give you at least someone on hand if you have questions about things but AirBnB can save money and give you a whole apartment and added privacy. Finding somewhere reasonably near a metro can make life easier for a first visit. (In SP, buy a Bilhete Unico card -- gives you hassle-free, queue-free, ticketless entrance to Metro, buses, trains. Although taxis are not expensive, there are times when the Metro makes sense. The bus services are also excellent.).
Finally, important, as a first visitor, it really helps if you learn the Brasilian way of doing things. Greet everyone with a 'Bom DIA' (good morning) even in shops and cafes. Follow with a 'Tudo bem?' (how are you?) before getting into conversation. Brasilians are mostly softly spoken and avoid arguments -- try not to make the American faux pas of talking too much, too loudly, or assuming you know how things are or should be -- the culture is entirely different. Never try to outsmart Brasilians -- they will see it coming and run rings round you.
I think you will not need to go beyond SP and Rio. But there are excursions such as Ubatuba and Santos from SP, Paraty from SP or Rio. Rio has more than enough undiscovered gems of its own but for something special you could do an excursion north (short flight) towards Bahia.

Yes, there are skinny girls in both cities even though Brazil is famous for curvy and thick girls. It's a large, diverse population so you can find almost any look that interests you. My opinion is that most of the skinny Brasileiras have some pop in their ass. This I don't think is a bad thing. I never hear anyone here ask if they have skinny girls with tiny, flat asses.
If you have a lot of time, you might want to check out Sao Paulo for a few days. Although mongerers love the offerings in Sao Paulo, Sao Paulo is not a good tourist city. The working girls and food are great. AltoBomGosto in SP armed with an objective could probably find you bisexual babes.
Your girlfriend would likely enjoy doing some sightseeing around Rio and staying near Copacabana Beach or Ipanema Beach. Depending on your budget, Ipanema is a little more expensive. Safety is always discussed. If you stay in a nice area, you and your girlfriend should be fine in the daytime. Nighttime in either city requires some precaution. This leads to lodging. I cannot imagine sharing a hotel room for a month. I personally would find an apartment/condo rental with periodic cleaning. While not as popular as Carnival season, January is prime season. I would also think in an AirBnB you would have more freedom with guests. While some hotels are fine with a single man bringing a female guest, I don't know if they would charge a fee or hassle a third person going up to the room. So if you find a good female bisexual performer, definitely get her digits and invite her over
Just like everywhere world, look for a Gracie BJJ Academy near your lodging. Rio is the birthplace of BJJ and the Gracie empire. Perhaps you'll get a glimpse of an up and coming UFC fighter. Perhaps you will find an attractive, bisexual BJJ woman. Just sayin'.
