Booking a room for two (habitacion matrimonial in most south america). They should not make any complaint. If they ask you her name, tell them it's your girlfriend.

They will only check she's 18+ and that's all the control they can do.

That is not the case for Colombia. They will copy the ID and fill out the registration form in 95% of hotels. And if another time you try to bring in a person besides that one, you will be charged extra.
