As of now, looks like my Europe trip might not happen. If they open up the international flights to Quito, thinking of spending a month here. Especially with the airbnb prices looking pretty good. Do you think it'll be a good idea to stay that long even though I don't know any Spanish? I'm open to staying a while and enjoy what the area has to offer.

All travelers who are not Ecuadorian citizens or residents must quarantine the entire 14 days in government-designated temporary housing / hotels even if they present negative PCR test results.

Yeah, the only real options now are Mexico and Nicaragua, and I think you would just have to do with the local women. I have a Brazilian I am trying to meet, and the fares to Mexico are two or three grand in June, and I am not even sure they would let her in. The fares go down to hundreds in July.

The site below says you have to quarantine in a govt housing / hotel, so I am not sure about being in a govt housing for 14 days. If I can pick my Airbnb in kennedy park and bang chicas daily that is different, but NOT govt provided housing. Below is from the US Embassy site about non Ecquadorian citizens, such a gringos.
