You can go to elmokhtabar or elborg and told them that you are traveling to one of the Arabian gulf countries with a company and they ask me for some checks they will do HCV, HBV, Syph and HIV you can told him also that I need to give you the name as the one in passport and ask him to be in English also they you can give him a fake name fake number also you will got the results on line or on your mail so you gave him an e mail that you do not use a lot.

Never go to a lab and do an HIV test, in fact never do an HIV test in Egypt! The reason being is that if the test came back positive for any reason the government will jump on your ass like flies on shit and would never let you go. My advice would be to go to any European country or the US and do the test there. They even have anonymous tests that hide your identity if you so wish but I don't think that would be necessary as these are free countries.

I even read that in Thailand you can go to any medical center round the corner and do a quick HIV test.

As for syphilis, herpes and the rest of the STD's you can do them in any lab in Egypt no problem.
