Will hit the clubs and try to establish a "bond" with a good performer and offer to meet her outside the club on her off day. I know that there are rules at the clubs prohibiting this but I found that in Prague at least quite a few girls actually suggested this to me. I've stayed in over 100 hotels in Spain over the years and have only come across one WG in a hotel lobby at Puerta Banus, so I am very sure that this is NOT the way that they hustle for business. Anyway, that is what the clubs are for, and there at least 4 really good ones in Madrid where you can conduct your interviews and often they will be willing to go back to your hotel or apartment.

I have been doing a lot of Madrid research for an upcoming trip, so this might help you, and help me too, if others have actual experiences.

You have to be careful with that Spalumi review site since it has a million pop up ads and redirect Trojans. Natasha has a very good review on an American review site.
