I've always understood you cannot stay more than 90 days over a period of 6 months.

Apparently the 90 day rule does not apply. I found the following update from 27 Nov 2017. After 6 visas in one year you may be questioned about your trips and it confirms the 2 land crossing a year.

Or will they look back 6 months and include the number of days I stayed there in August and November?

I should get the retirement Visa but it's a real hassle with the income verification process which is sad cause I'd stay longer without this issue. That said pretty sure they don't reset at the new year but use your travel dates.

If you want the real answers go to thaivisa.com. From what I have read there is no limit to visa on arrival by air transport. That does not mean they will not question you. As for getting tourist visas at embassies, same answer. No written law about limits.
