You set fire to the prairie and everything living there either gets burned alive, or it runs away, but the habitat is destroyed. Next, you plow the land, destroying anything which might have survived living beneath the soil. After working the soil some more, eventually beans are planted and everything can return to normal.

That's just the beginning. There's so much more to consider, irrigation, harvesting, plus all the little bean eating animals which need to be killed to protect the profits.
