1. She genuinely likes you and would not mind 'doing it' with you, but do not want to do anything in the Spa (may be it is a very professional spa and she might lose her job if something comes out).

2. Chances are low, but she might have some sinister plan to trap you and extort you.

If I were you, I will still go ahead and meet her for dinner (assuming you are attracted to her, otherwise there is no point). However, I will take a few precautions.

1. Never let her chose the place for dinner.

2. don't tell her the place you are taking her till the last minute. If she questions, just tell her "Its a surprise. Trust me, you will love it". Don't give them the opportunity to plan anything.

3. Take her to a upscale place / place with good crowd. Like a mall or a star hotel. Any miscreants causing issues are low there. If she has privacy concerns, it may be best to take her to a really high end restaurant.

4. Worst case something really goes south, just stick to the true story (other than the fact that you knew she is married). Nobody can accuse you for going to a spa or meeting a girl for dinner. There is a fair share of moral police here, who might take offense to the fact that you went on a date with a married lady, so just maintain you did not know about her marital status.

In the end, mongering is never a risk free activity. Personally, I enjoy the thrills of such risk as much as I enjoy sex.

You should take the final call yourself ofcourse, just giving my 2 cents.
