You can order drinks to the short time rooms at Casarao but I don't remember whether such a thing is possible or allowed at clinicas. I only remember they give you free coffee.
I'd feel safer partying in my own bubble during the day in broad daylight than late at night amid the turmoil and sketchiness of Rua Augusta venues.
Clinicas sell drinks that I'm sure you can take to room. Generally, while waiting for line up or just hanging around usually cerveja (s) are offered and depending on the level of clinica mixed drinks are available for purchase.
As far as parting at Casarao or any Boate or any drinking establishment Don't drink beyond your capacity and always maintain situational awareness, if not no matter where you are on earth you could make yourself a potential target(victim) of crime. So, if you really want to party and "let loose" don't walk Rua Augusta just take Uber straight from establishment to your hotel. I have never felt walking Rua Augusta to be unsafe, but I walk around with my head on a swivel and maintain situational awareness at all times.
