Unlike France--where I lived for years--service charges are not typically factored automatically as a percentage of a bill, and I supposed the tipping habit evolved as a means of expressing gratitude for service above and beyond expectations. Eventually of course it devolved into an expectation to the extent that most of a server's compensation is now comprised of tips, so failure to tip a waiter or waitress would be looked on as downright churlish.

I take the position here that most people in the service businesses, including the LA ladies, come from situations in which a few extra dollars can go a long way. For me, tipping in that situation has little or nothing to do with eliciting better service and everything to do with humaneness.
