While the local price is still 300 k at NPK, they will hold out for 400 k. Tourists can probably live with that, but note that they are already taking an extra 100 k from you, which should quash any desire to 'tip' them even more.

You pay the total amount to the desk afterwards.

In all the shops they will line up the available girls for you to select from. I'd suggest popping into 3 or 4 shops and checking the line ups, then going back to the one you liked best.

Above all, do not let them rush your decision.
