If I do make it to the next OS release, does this erase the previously hacked unlocking? That is, if I am over there and the next OS is released, do I start from scratch again and have to unlock again?

Sorry, but I forget which is which but a Google search should quickly answer the question.
I had both done to a 1st generation AT&T iphone at MBK in Bangkok for B400 and it works very well. There certainly are shops in TUC COMM, Pattaya that can do the same.

I'm in my 60's but I have a friend in his early 30's who I occasionally meet for lunch at Paragon.
He has a great job with a US company and is always well groomed. I'm always drop-jawed at both the quantity and the quality of the girls who blatantly hit on him, some handing him cards with their numbers. Funny thing is he is VERY married and never touches them; like having only a tossed salad at a steakhouse.

And certainly I'm not saying when traveling you have to except everything 100, I haven't been around the world like you but even in the United States which I have traveled in my life time been around enough to have been in situation in the south and with so call hillbillies and you talk about loud and splitting. I have been going to HK since the 70's and have venture into the border of China before it was opened. As with H. K I know they are one up or above the PRC, but I've seen plenty of pushing and split in the back alley's. When I'm there I don't do the tourist thing with family I go local and I've seen more than I care too, as for Singapore only been there once in the late 70's so no comment.
