The industry in US follows stringent testing guidelines (don't know about Mexico). However, there have been cases of infections during window period (time between infection and it showing up in tests. This varies from 14 days to 2 months depending up on type of infection).

So, you're taking a punt that there is no recent infection and to that extent the risk is limited.
