That's true - it's not a woman's name, it more a descriptor. An Adelita is a girl who lived the dangerous life and supported the revolution etc.

So it's "the Adelita bar," a place for girls who live the dangerous life as opposed to "Adelita's Bar," with Adelita being a particular person as the owner. Interesting stuff eh? And that picture, I have a copy from one of their calendars, very sweet.
