I just got back from a week at Istanbul. I stayed at the conrad Hotel and they have a wonderful rooftop restaurant. Everything is underground there, very secretive, it's difficult to find any of the above especially on a budget.

If you have researched then Wiki is totally out of date, the rld's mentioned zurafa and kadam are both closed down.

Talaabasi Blvd has SW in the evening but most look tranvesti.

There is a brothel at the bottom of kucuk bayram in taksim, but it is not very appealing but safe to go look if you are in the area. But I would not venture inside, the 'girls' hang out the windows.
