I make it clear that the 'meet & greet' has no obligation for either of us to go ahead (the chat is saved) except her cab fare and I pick up the restaurant tab.
If we do want to go ahead immediately after the meet, it would not be a good idea for either of us to drink heavily. Someone asking for an expensive drink, gulping it down and asking for another, is a red flag and I would stop at that point.
I choose a place I visit often. There are several, so I can choose one which is not too far for her. In any case I'm paying cab. The servers there know me and would even escort the lady out, if she creates a scene. Similarly, if it is the bar in a hotel I stay in often, the staff will side with me as the paying customer.

But if at all I want to meet a girl outside for a causal meet, I normally prefer to meet her in a location which I prefer and choose. May be a regular hangout place where I go frequently so that waiters / staff know me so that they can help me if something goes wrong like this or I meet the bird in the bar / restaurant of same hotel where I stay so that I have some support from the staff as I am their "Guest" .
