I've always had two phones, I use my older one as a "burner".
What does that mean: all apps, social media, etc on the burner are under a fake name I use for the hobby. The sim is a local sim which has to be linked to your EID or PP, there is no way around this here.
You can use an eSim from another country, but often times you have to be in that country to activate it, and then you have to deal with the hassles Kaauh describes.

The 2nd phone is a must, IMO and the eSim I have can be activated here, no issues. The local number I have is from Virgin is in my real name but never used for calls or WhatsApps, only data when I'm not in Wi-Fi. I also have a VPN on all the time.
The downside to eSim is it can only be used on iPhone X or later (no idea about Samsung) but the set up I have works for me and I've had no issues even with family seeing the phone as I just leave it in the bottom of my bag when I'm back home.
