New Yaohan Supermarket takes 103 for 100 and HSBC in Macau pays 1.03 when you transfer from one account to another. If you take MOP from an HSBC Hong Kong HK$ account, the rate is more like 1.01.

I think most of your plan has been well vetted by others. I can add a few tidbits:
From the airport: I think the cheapest way from the airport is the E11 bus. It is about HKD22, taking about 75 minutes to Wanchai. If you get your smart phone data working, you can track your progress and see right were to get off near the Wharney. The A11 bus is about HKD40, and about 15 minutes faster. The most efficient way is the Airport Express train. It is HKD100, but you can by 'tickets for 4', and use them one at a time for HKD70 each. Then the MRT ( HKD8) or taxi (HKD20) the last bit to Wanchai. If not on a budget, take a taxi for HKD300.
Telecommunications: HK is telecoms paradise. There are lots of superfast networks and quite cheap. If you are from the States, you won't believe how cheap. I have used CSL, Smartone and Peoples. Peoples is probably the cheapest, Smartone the fastest. You can buy at most 711s or there is a cluster of telco offices around Johnston and Fleming Roads, about 5 minutes walk from Wharney. If you go there, and don't go on Sunday as you will have to line up, they can be sure your data is working. It won't work in Macao, or will be very expensive. Best to go to the telco in Macao (Smartone again) and get a Macao SIM.
Velvet Curtain 'strip clubs': Don't bother with the strip clubs. They are not clubs and there is little if any strip. The dancers are no more beautiful, nor is their dancing more sexy, than the girls in the discos. But It is your dime. The only think you can do there you can't do in the disco is get an on-premises blow job (well you can get a BJ in the disco, but it is risky). That however will cost you lots. Again, don't bother. If you want a quick, for sure, BJ to to 141. They are conveniently located everywhere.

Remember, these women on Saturday and Sunday are not working. Don't pay them as if they were. If you like them buy them a nice gift, take them to dinner. Else you will be the fool they will be laughing about next week when they ask if I believe this guy paid them.
Indo girls: you can meet them anywhere in Wanchai most any night or weekend. On weekends there are mostly Filipinas in Neptune II and Insiders. Mostly Indos in Makati (go figure?) J Forest. For a trip, walk through Victoria Park on Sunday afternoon. Just smile and say hi. It works. There are not 30, 000 domestic helpers in HK, there are ten times as many! About 300, 000. The ratio is moving in favor of the Indonesians, but there are about 130, 000 Filipinos (mostly Filipinas) and 150, 000 Indonesians.
Macao: Lisboa. The old one. Is a good choice. Well located, good rooms and good value. You can book on Agoda or simply buy discounted rooms at the ferry terminal as you leave HK.
As for your wallet, you can spend as much or as little as you feel comfortable with. You can get the working girl of your dreams at Escape with no haggling for HKD4, 000 or. For HKD250 at 141. Or the girl of your dreams for free with a smile and a few jokes on Saturdays and Sundays.
I find as much excitement in the hunting as in the deed. And hunting is free.

It is ok to meet buddys for a beer after work, but no girls to speak of. Better to base yourself on Hong Kong, Wanchai itself if you can.

When I moved to HK 25 years ago they were there (and took a certain amount of my cheese, till I learned the ropes at the original Makati. Its called New Makati as its not the first one!) and they are all still there, and still empty etc.
Unless they are triad money laundering operations they bring no return except to make the fat and old mamsans ever fatter and older. Who owns these places?
