The guy at the desk said there was nothing he could do, my word ageist the guy who checked my room. It wasn't worth fighting about, and I lost a bit of my deposit and my time, but I learned a lesson.
Second and third trip I had much larger rooms Deluxe double room and the Penthouse 2. I left $5 for the Double and $10 for the Penthouse. When I went to the OXXO store, I bought a bottle of Coke and left a note "Gracias". Those times I waited less than 5 minutes for them to report back to the desk and that everything was good in my room, full deposit back to me.
Also when checking out, go to the desk next to Azul. While you are waiting for your room to clear, you can grab a quick beer rather than waiting in the main lobby.
Offhand suggestion, you might try taking a photo of the cooler when you first get your room and take another photo when you leave, which will show what drinks you consumed from the cooler. The cell phone photos are timestamped, so that should be enough proof for the clerk, when you show them to him. I suspect another reason the hotel installed the coolers is to have a way to recoup costs from guys who trash their rooms with enough money to pay for the repairs from their deposit.

I haven't had to show the photos yet because my check outs have been uneventful.

Maybe the guy checking my room was in a bad mood and decided he needed a drink on me since I didn't leave him any money.
Another idea about the cooler is after you're done with a session some ladies will grab a drink from the cooler before heading downstairs, adding more $$ to your hotel bill. I don't mind providing a drink after a hot session, but not at the huge mark ups the hotel charges for the drinks in the cooler.
I stock my up my room with bottle water, beer and soda from the convenience stores in the area, for $5 you can your mini bar for the cost of a Red Bull in that cooler.
