In fact if they are any good, they would atleast forge enough documents to prove she is under age. And in that high tense situation they can saw enough doubts in the customers mind to panic them, assuming the girl looks somewhat young.

If you are sure she is not a minor, legally you are on a firm wicket. Prostitution or paying for sex is not illegal in India. They can only charge you some very weak sections, that too if they can prove this happened within 200 m of a public place like a school or a hospital. And even then it is a minor offense that can lead to some fine and worst case 3 months imprisonment. 99% of cases, police won't charge you unless you are caught in the open etc. This prostitution being a big crime is often coming from movie scenes of raid etc, which is not really true. No police is going to barge in to your room and arrest you if you and the girl are alone in your room. Atleast not in big cities. Of course going to or running a brothel is a bigger crime and it is under these sections they raid spas.

But I suppose most people pay up not because of the legal issues, but due to reputational issues. How you handle that is purely dependent on how much reputational risk you have (for eg. Are you in your home town Vs you are visiting a place on work) and how much is the money demanded valuable to you.
