I have been an on and off fan of Escape (previously Fenwicks) for close to a decade & have fond memories of my first few times there (remember the way the Columbians used to line themselves along the side wall?).
I was there last night, arrived perfectly sober & after a while began to note that the quality of the girls was probably as high as I have ever seen it. Even the Columbians (seems to be the HK term for all South Americans but you know what I mean) were pretty, not the fat ass, unfriendly types who have been frequenting the place of recent years.
Only complaints are that it was damn loud (old age?) & also too dark to really see the girls. I had actually spotted many of them walking along Jaffe towards Escape previously while I was having a few beers outside Dusk 'til Dawn & was then able to peruse around Escape looking for those I had spotted earlier.
Wan't mongering so didn't get to talking to many so as to avoid temptation but also because it get's damn expensive if you want to chat to a lot of them (buying a drink seems a lot more necessary now than it used to be?) but there seemed to be a good mix of Phils, Indos & even what looked like Chinese faces (which I am guessing were from Thailand or Vietnam with some Chinese blood?).

Earlier in the week I have been in HK Cafe, Neptune III, Makati and at the end of the night Bar 109 & Players and I can't say it's a general trend (although Players seems a lot more relaxed than in previous years and has an interesting mix of pro and non-pro which creates a more fun vibe. There are many Western countries, and surely many different approaches, even within the one country.
And I have no idea if the Australian approach that you describe is standard throughout all the states. Australia has different prostitution laws in each state which may affect payment standards; or it did last time I was there (I am Australian, but rarely return there).
BTW, I think that you and Ebauche are using the word 'embarrassment' with different nuances of meaning. Ebauche's point (2) probably equates to your use of the word: saves the embarrassment of a shitfight over payment.
And Ebauche describes the [b]"ideal payment"[/b], where prostitution is illegal, as being after the fact. For providers, the ideal approach is payment before; for customers the ideal is payment after!
