I've been through the process enough times during the pandemic, 4 to Colombia so I should know better.

Soon, the EU will open up too.

Also Guatemala, Georgia, Spain as Balboa noticed. Italy is also accessible on special vaccinated flights. I think most countries will open up pretty soon to vaccinated travelers or face huge losses from the lack of tourism. Get those jabs, fellas, there is no downside. At least science says so. Not having to go through these PCR tests when you don't know if you get them in time, is a huge deal, IMHO.
