Holding hands isn't something done either by Thais but you see it between a Farang and a Thai. Feet, they are folded in because the feet is consider the most dirty part of the body and as Farang we have a hard time (most) sitting and eating like a Thai on the floor. So when doing so don't point your feet directly in front of a Thai, try to point it away they would understand we Farangs have a hard time and will compromise, one who don't and get upset you don't want to be around. Here is a good example! I have taken Bell Travel Bus many times and on the bus behind the driver are two seats the one near the isle, if you across your leg you feet is right in front (left of the driver face) and I have seen many times the driver being arrogant slap the passenger feet away and just not say anything making the farang passenger left thinking WTF?
Now when it comes to legs and feet I never had a complain since I like to get them up on my shoulders and give legs toes a good tongue lashings like if I was washing it for them? When it comes to P4P, throw most of that religious stuff out the door you are paying for it and they know it?
