Ermita casas
The one casa on UN ave is 1 block East and half a block North of the US Embassy.
It's on the ground floor of a multilple-story apartment building, not tin-roof shanties.
There are no stores or commercial / industrial buildings in that area. The casa occupy the first floor with young girls lounging on sofas. For all intent and purposes, it is a residential unit.

The water of Manila bay
For beaches you should go to Cebu or Palawan where the water is clean.
With sewage from Manila pouring into the bay for hundreds of year, the bay smells just like a cesspool. I would not recommend dipping your feet in it, lest you may pick up diseases. Yet there are people who fish along the boardwalk and presumably eat their catch.
Further South from New Asia mall and beyond, the water does not smell as bad, but I suspect still carry very high bacteria content. Just go to smaller remote islands and take a few girls along for beach funs.
It's probably cleaner and safer to suck Pinays' pussies and asses than dunking in the bay. Hehehe.

Vacation to the islands
Cebu seems good but Palawan may have a very small selection of girls. You don't want to go to the islands then have to waste lots of time finding companies or finding unsuitable companies or none at all.
It's much better to spend a few days in Manila "interviewing" the girls, to make sure you will have the perfect sex partners on the beach and in the bed. Most of these girls would love a vaction to the island.

His cryptic directions at first confused me a bit because UN Avenue is an east-west street and it is already north of the US embassy. To go 1/2 block further north led me to believe his casa was on a side street, such as Alhambra which is a north-south street. His later post clarified things.

The malls
I went to Robinson mall in Ermita and the one in Angeles City. Found many nice, clean, sweet, good-looking girls, but they were almost always with families and friends, none would hang around furtively eyeing guys for tricks.
Girls in malls are very attractive, but I don't know how the bros found them.

Food in the Philppines
With severely polluted ocean around Quezon, I would be very careful what I eat in the Phil.
There is an outdoor market with a few stalls selling live or fresh seafood near New Asia mall, and a dozen restaurants that cook the food for a fee. But the supplies are small, varieties limited, and prices are ridiculously high, like 5 x to 6 x average price in the US. WTF? The Phil are basically fishermen living on 1000's of islands in the middle of the Pacific. Why the fuck is their seafood so expensive? They pissed me off.
Went to a few fancy seafood restaurant on Ermita and Malate where food are sold by the 100 grams. Restaurants in the Phil are very plain and expensive and the foods are not so good.
Stick to the food courts in malls. They serve large varieties of authentic Filipino foods in clean environment that the locals like. Recommended.
I never like chicken, but 1 afternoon hanging out on hot, humid and dusty Fields Ave in AC with nothing to do, I sat down on wooden stools and grimy tables on their sidewalk among young bar girls and old prostitutes, and tried their broiled chicken over smoky charcoal, washing down with cold San Miguels. Man, their charcoal-broiled chicken is excellent, probably the juiciest and tastiest in the world, in the words of a few perverts, as tasty and juicy as young Pinays' pussies. Hehe.
Did not have time to find their roast pig. I heard their roast pig is also very good.

Have not been to AC or Manila yet, but did go to Cebu for a while on a short diving trip. All the best food was at the Ayala mall. Better than anything else locally by a mile, and at good prices. I went there for every meal. Saw ladies on the prowl too. Not a lot, but enough that you notice. But I wasn't hunting myself, so there were probably more than I just didn't spy.
Everyone hangs out at the mall. There is lots of traffic, which is why the food is always fresh. Its the center of social life there, kind of like the way it was in Southern Cal in the 80's. In fact, PI society kind of reminded me of the USA in 1980's. Fun loving, innocent, maybe a little naive. They way everyone is always singing.

Food in the Philippines
Funny, but I too have never had really good seafood in Manila or Cebu City. There must be a few high end places and hotel restaurants to go to, BUT... If you want to have great seafood, I recommend that you just go to the beaches. I have had great tuna steaks cooked just right in Sabang, Port Barton, and El Nido, Palawan. I am pretty sure you can find the same quality in Boracay and other island beach locations.
I have also eaten really well on Baloy Beach in Subic. The Blue Rock and Captain Robb's Barefoot Bar and Restaurant both serve up great, fresh seafood. But this is the Philippines, so instead of having gourmet side dishes to accompany the sushi grade fresh Tuna steaks what you get is macaroni salad and a baked potato. You got to love the PI!
BTW, someone was talking about Palawan. I think Palawan is great. They have some spectacular beaches. BRING YOUR OWN GIRL! And have a great time. Although there are a couple of bars with girls in Puerto Princessa, I think the quality is sketchy and the price (3000 p LT) is high. Besides Puerto Princess is not where you want to stay in Palawan.
A bar girl turned me on to the BBQ chicken stands along Fields in AC too. Outstanding! The chicken had great flavor.

Authentic local girls
you should post more info about the casas you went to in ermita. del pilar is only 1 block from manila bay board walk. the bros in medellin, colombia did very good jobs listing and updating info on all current clubs, bars and casas.
when i go overseas, i prefer the companies of authentic local girls. last thing i want is to hang out with so-called "more civilized" girls, which may mean they already learned the bad habits and nasty attitudes from us ghetto' hoes. hehe.
in the future i will try to set up dates via dia, craigslist etc. trying to get relationships more personal than with bars' or casas' girls. craigslist has many girls posting very pretty pictures. i got jacked around too many times by fake pics in craigslist in us and china, so i am still skeptical.
if all else fails then i would just go back to the casas or worse, the old, ugly girls of la cafe or p burgos. hehe.
