I like the scene because everything is clearly defined in terms of duration and price. It is rare to see Westerners and the average backpacker only perceives Asian couples, so is unaware it even exists.

An interesting phenomenon, when entering Thailand at Dannok from Malaysia (Bukit Kayu Hityam) is the 'Disappearing Kings' trick. With land-border runs being officially limited to one or two per year, at the immigration officer's discretion, one can 'store' a couple of thousand THB (USD 62) within passport pages to over-ride any potential blockages. Everyone knows this goes on, far from headquarters in Bangkok, but it can deliver potentially-unlimited, 60-day entries. Dannok is 45-minutes from Hat Yai by road.
In the highly-unlikely event of encountering a snotty official, that's where you keep your money for safety. Accept the entry-denied stamp and return to Malaysia (automatic 3-months for Westerners) for another try -- or apply for a tourist visa in Penang or KL. The multiple-entry version gets you up to 4 x 60-day entries in succession for US $200. So, $324 and 6 border runs effectively buys an economical year's stay, compared to other complex and expensive visa options.

And I expect there are still good, 24-hour-wife booking (buyout) places. Some may have migrated to the Malaysian border town of Dannok. In 1987, a hottie from Hatyai -- usually a central, northern or north-easterner -- cost B700, which would be well into the thousands now: paid in advance.
Still fair value, as they face punishment if they run off early (never happened to me; I usually got bored first and returned them, politely, the next morning). The Malaysian / Singaporean punters tended to book one girl for their long weekend or week in town.

Mandarin "hotel": 500 baht per pop, straight up brothel, open 24 h from what I can see, with distinct day / night shifts. At night they sit in front, during the day, you need to enter and walk around. Some workers from the north who might not be Thai, a motley mix occasionally, but cheap enough that usually low quality service won't be bothersome. Orange building on the corner of Nipatuthit 1 and Prachathipat roads.
Kim Hua "hotel": 400-500 baht per pop, mostly daytime, closes around 9-10 pm. More steady Thai workers, slightly better service than Mandarin, but not "good" by Pattaya standards. On Nipatuthit 3 road, close to the T intersection with Chee Uthit road, has an English sign.
Lao houses on Nipatuthit 1 road Soi 2 and 3 (which connect in a you circle). About 6-7 houses with Lao girls, 1000/ pop. Not great service, not particularly friendly, but some great lookers for that price. These get going at night, around 8 pm, there's not much to indicate they exist in the daytime.
There are also streetwalkers on Nipatuthit 2 and side streets, 500 baht.
Chinnawate road takeout places are nearly dead and ask ridiculous prices (2000-3000 baht for a tiny selection of decidedly unappealing women).
Was just passing through several months ago, didn't have a ton of time to snoop around. Haven't found anything else of use. If you do know, please share.

Posts: 16I found Hat Yai to be a cool town. There are worthy MPs opposite Lee Garden Night Market and other ones scattered throughout the city. Overall the vibe is laidback. There is a hypermarket less than an hour away called Danok, but I thought the scene was pretty run down there. It's definitely active thought. It caters to Chinese and Malaysians from what I can tell.
