You can try by enabling "hotspot" on your phone, to let it create a wif-network, and then let the ipad connect to that network, instead of directly to the hotel wifi.

If your phone is too old / too basic to support this, it should either warn you it does not support it, or you will see it will turn off it's wifi, meaning it only supports sharing the mobile data connection (if any).
