IMO your original plan to arrive Friday and check out Cowboy and Nana Friday and Saturday, then go to Pattaya on Sunday is a good option. Pattaya has plenty of action Sunday through Tuesday. The only other option to even consider is going straight to Pattaya when you arrive on Friday. Only go to Chiang Mai if you want to go sightseeing.
