I am certainly not an expert. I have been there only twice for few nights. Went to Luca's Bar in Vitacura and Platinum, both quite close to the hotel were I was staying. Here is what I would do with hindsight and reports that did not exist when I went.

Look for the reports listing the best upscale coffee with legs places.

These are often in malls, so you can do a bit of touristy shopping anyway.

And South Americans make good coffee, so worst case you look at some pretty girls and have an excellent cup of coffee.
