This makes it a lot more affordable to head into town (either Kowloon or Hong Kong Island) for the evening for a good meal plus some mongering. Just make sure you get to one of the downtown stations before the last train of the night (sometime around midnight, depends on the station) leaves to go to the airport.

Another possibility is to try to talk your company into paying for a hotel room in town, might be the same price or even cheaper than the hotels at the airport. I once stayed at the Regal Airport Hotel that's connected to the airport terminal and it was not cheap (although it was nice and awfully convenient).
