It depends on your personal preference my friend. If you are not worried about leaving a trail on your account statement, then I would recommend paying online. I personally always pay online as it ensures that you have a proof of paying any chick for the deed. It can certainly help if things go south and girls tries to scam you by saying that you took advantage of her. Though that rarely happens, but it gives you some peace of mind. You also have her chats and call records stating that you paid her for sex.
