Just want to understand how much we are at risk if we receive it?

PEP is a very strong drug and you might feel some side effects like low mood, nausea, dizziness etc atleast during the first week or so. But I have heard the modern version has less side effects. PEP should be started within 72 hours of contact but earlier the better. Always consult a good doctor before taking PEP. Usually they will ask you to do liver and kidney function tests as it is a powerful drug. For the time being, if it helps you can get the bird to do a STD test if you can convince her. Ofcourse there is the fact these tests will not reveal any STDs she has acquired very recently. But then that is too much excessive thinking. Just try to relax and go see a good doctor and then you can decide based on the risk perception.

Consult a venereologist for physical examination. If doctor advises, check for Hba1 c, FBS and PPD.

Do Fasting and Post Prandial blood sugar and do HbA1 c to rule out Diabetes.
