If you want to do a pre meet video call and she does not agree, drop her. How else will you know if the person in the pics is actually her? If she does not do a video call, she won't do a (unpaid) coffee meet either.

She has only just joined, so its unlikely others will have info. I would go for a VC, or non compensated coffee meet first and if she is what you're looking for, start with a shorter session where she will presumably quote a rate similar to most on SA.
Exclusivity on SA does not exist. The best you can hope for is that if she has a full time job, salary is her main source of income and you are fully able to meet the extras she wants from SA,
she is unlikely to have the time or inclination to see others.
